This is a recipe that my Step-Dad John Polsgrove made one Christmas and it has been a tradition for our family ever since – I make it for all the parties and it tends to be the most recommended by friends and family.
Here is what you will need:
2 Pkgs of Philiadelphia Cream Cheese
(you can use the Fat Free for a healthier version – Bear likes it with the regular Cream cheese.)
1 small jar of pimentos – Drained
1 small can of diced black olives
1 jar of Hormel dried beef – Chopped
1 bunch of green onions – chopped including the greens
Put the two cream cheese blocks into a mixing bowl and let soften.
Drain the jar of pimentos and add to the bowl.
Drain the can of diced black olives and add to the bowl.
Add the chopped dried beef to the mixing bowl.
Add the chopped bunch of green onions to the mixing bowl.
Now grab a fork and start mixing until everything is mixed evenly.
Put the lid on the bowl and put in the refrigerator for 24 hours.
Take out and divide into four small cheese balls and wrap in plastic wrap and serve with Ritz crackers.
The longer it rests in the refrigerator the better it gets!
