Thanksgiving Meal at the Ranch

I thought I would let you in on what we will be inhaling at the ranch tomorrow.

Breakfast – Butter Braid with Raspberry filling & coffee. Then we are off to visit the horses – give them their breakfast and then we will be back to start our meal.

Appetizers (Lunch) – Fresh vegetable plate with vegetable dip – Carrots, brocoli, cauliflower, olives, pickles, celery w/cheese & peanut butter

Deviled Eggs

Bacon wrapped stuffed jalepeno peppers – from the Pioneer woman.

Dinner –

Turkey Breast w/gravy
Homemade Triple pull-away rolls
Praline Sweet Potato Casserole – for me
Mashed potatos – for Bear
Greenbean casserole
Stuffing – cornbread, biscuits, chicken stock, onion, garlic, celery, eggs, pieces of turkey with a hint of sage. I carmelize the onions, garlic, and celery and then add them to the chicken stock to heat up and flavor! I also add a 1/2 stick of butter for flavor as well.

Cranberry sauce
Butter glazed corn (delish) – 2/3 cups Fresh Corn, 1/2 stick of butter, chopped garlic (2 cloves), salt, pepper, chopped onion. melt the butter, add the onion and the garlic, let the onion and garlic cook for about 2-3 minutes and then add the corn, as the corn cooks it will begin to brown/carmelize. This is so good – I got the recipe from Kelly Rippa but I modified it.

We will eat like a King and Queen for the entire Holiday Weekend and I’ll try and freeze at least four dinners for later – for lunch or dinner when we are too tired to cook!
