Mexican Cake Recipe

I have been told that this is an awesome tasting cake. It was sent to me by my Mom, Linda – I can’t have this but I can have something very similar – I will post a variation to this recipe that diabetics can have. Enjoy!


2 Cups sugar
2 Cups flour
2 tsp soda
2 Lg eggs (beaten)
1 Can crushed pinapple (20 oz can)
1 Cup chopped pecans

Sift togeather sugar, flour and soda, add eggs mix and pour into 9×13 or 10 1/2 x 14 3/4 pan (I used the bigger one).
Bake at 350 for 35 – 40 min.
Cool 20 – 30 min and frost.


1 Stick butter
1 8 oz pkg cream cheese
1 tsp vanilla
Beat in
2 Cups sifted powdered sugar
1 cup chopped pecans
