Corn Casserole Recipe

I did have a little bit of this over the weekend – not alot but a couple of bites and it is SOOOO DELISH! I know that some of this can be changed to make it more diabetic friendly – like the Sour Cream could be changed to Greek Yogurt. But you have to try this recipe!

Corn Casserole

1 can corn (drained)
1 can cream style corn
1 small sour cream (8 oz)
onion powder
2 eggs
1 stick oleo (melted)
1 Jiffy Corn Bread mix
Grated cheese for on the top
9X13 pan (sprayed) – 350 – 45 minutes
You could add a can of green chilies.
